The yeast is one that I've cultivated in my cellar and inoculate in our new cider barn (which I assume does not have the same ambient yeast.) I don't rule out sulfite for problem situations, or store-bought yeasts either, but I do not want my barn, apples or ciders to be dominated by outside forces.
